A few Suggestions from Ben to help you decide your catering menu!

How much Food do you want for your party? It's a question that's not always easy to answer.  First you need to have an idea of how many people "might" show up.  Next, what types of food will you serve.  Do you want servers to do everything? Perhaps you just want the food to serve yourself.  We have menus based on a per person price, but we can also customize the menu to meet your needs.  So to start, here's some guidelines!  For a one meal party, meaning breakfast, lunch, dinner, brunch or whatever, the amount of food per person should consider how many adults, how many children and you might have some idea of how much they eat normally.  Consider supplying from 1/4 to 1/2 pound of meat per person.  With that in mind, you could just order by weight!  Next, consider what side orders you want.  For example, one half tray of Macaroni & Cheese is about 3 quarts.  As a side, consider between 1/2 to 1 full cup per serving (that's enough for 12 to 24 people) If you have lots of sides, you might consider a serving at 1/3 cup which would up you count to 36 servings. (3 quarts = 12 cups = 24 1/2 cups = 36 1/3 cups).  Okay, so now we have some basics. 

Lets consider a party for 50 people and I'm always asked "what do you recommend"  First, I would make sure you know what our meats taste like (we're forever giving out samples at the restaurant) Our primary choices of meats are Beef Brisket, Pulled Pork, Smoked Sausage (sweet or hot or some of each), Burnt Ends of Brisket, Rib Meat Special and Pulled or Jerked Chicken.  We can serve these straight from trays or as made sandwiches.  We also have Baby Back Pork Ribs, St. Louis Cut Spare Ribs, Giant Beef Ribs, Whole or Cut up Chicken, Jumbo Turkey legs and our very special "Smokin" Chicken wings.  From our experience with Ribs, if you serve Ribs only, you can plan at least one half rack (6 bones) per person, but when you combine it with other meats, perhaps 2 bones per person would work.  We would cut the ribs into two or three bone sections as you want. 

So let's say you choose Ribs, Brisket and Smokin' Wings.  I would recommend per person; 2-3 wings as an appetizer, 1/4 - 1/3 pounds of Brisket and 2-4 bones of ribs.  That computes to 100-150 Wings (about a tray and 1/2), 12.5 - 16.5 pounds of Brisket and 8-16 Racks of Ribs.  Along with that I would recommend three to four 1/2 trays of sides.

Other Options:  Pig Roast (We smoke small suckling pigs from 30-50 pounds, stuffed with Boston Butt). Brisket, Fresh Ham or Turkey Carving Station. Hot Dog and Hamburger Grilled on Site. Our Equipment includes chaffing racks, stainless or wire, serving tables, special decorations, portable smoker, pig roaster, our 24' Trailer, small tents, hot dog cart, steam tables, heat boxes, etc....
