Here's some pictures from our first year of doing catering,
especially pig roasts!
We normally smoke 30 - 40 lb pigs, stuffed with 15 - 20 lbs of Boston Butt
(a cut from the shoulder that becomes "pulled pork")
It takes approximately 14 hours yielding about 30 to 40 lbs of meat.
We can present it on our smoker or under heat lamps for a modest fee!
These pigs cost $6.00/lb and normally require about 10 days notice!
